Popularly known as the “Castle in the City,” Fairmont Hotel is one of the high-end hotels in downtown Vancouver. It was designed with luxurious elements that reflect the history of the city. Its location has easy access (just a few steps away) to dining, shopping, and entertainment areas.

The hotel has a lobby and restaurant bar. The owner wanted the wine cellar to function as a dividing wall between the restaurant and lobby area. This means that the wine display area is visible from the check-in desks. We had to create a design that is visually appealing and functional as well.  

Before starting the construction of the wine room, Blue Grouse Wine Cellars created 3-dimensional drawings to provide better visualization of the completed wine cellar. This process also allowed the owner to make modifications to the design according to their personal preference.    

After the client approved the CAD images, Blue Grouse Wine Cellars started the installation process. With a height of 189” and width of 182”, the room could accommodate 768 standard bottles (750ml). They had to make sure that all of the aesthetic and functional requirements of the client were met.  

With creativity and passion for designing and installing commercial wine cellars, Blue Grouse Wine Cellars were able to come up with a design that complemented the contemporary theme of the Fairmont Hotel. We incorporated modern features that added elegance to the space.

It is best for businesses that sell wine to opt for a wine cellar that can help generate sales. If you choose mediocre wine racks, people will not bother to check out the wines you sell.  When customers dine in your establishment and are enticed by your wine presentation, there is a high chance that they will purchase a bottle or more.   

Modern wine cellars are in demand in the hospitality setting because they impress guests. For this particular project, Blue Grouse Wine Cellars utilized metal wine racks to achieve a sleek appeal.  

They installed floor-to-ceiling mounted VintageView metal wine racks. Finished in Satin Black, the wine racks add flair to the lobby and bar area. This type of racking system was the best choice for the prestigious hotel because they are attention-grabbing.  

The metal wine racks were installed along both sides of the glass entryway from the lobby to the bar area, and at the top section of the wall. To support the weight of the racking at the top wall, the doors, and glass panels, Blue Grouse Wine Cellars placed a structural beam running through the middle of the wall from left to right.    

Glass Wall Enclosure 

At Wine Cellar Designers Group, we recommend wine cellars enclosed in glass to our Los Angeles clients, most especially to those who sell wine. Glass walls and doors allow full visibility of the wines on display. Displaying wines in a glass wine cellar can be an effective marketing strategy because the customers can see the wines on either side of the wall.   

Facing the bar area, the front side of the wall was manufactured with frameless glass doors for easy access to the bottles. On the back wall, Blue Grouse Wine Cellars installed insulated glass panels and trimmed them with metal cladding. They coated all of the cladding, handles, door closures, and hinges in bronze powder coat, which blended well with the existing fixtures in the hotel.

The wine cooling system plays a crucial role in achieving the optimum conditions necessary for the graceful aging of wines. In determining the correct type and brand of refrigeration unit, many factors have to be considered.  

For this particular commercial wine cellar project completed by one of our designers in Los Angeles, Blue Grouse Wine Cellars had to take into account the amount of glass in the wine cellar. They performed a heat load calculation to determine the most suitable wine cooling unit for this large wine room.  

After making a careful assessment, Blue Grouse Wine Cellars selected the CellarPro Air Handler 24 with front ducting. It is a split cooling system equipped with powerful fans. The condenser required 24 inches of unobstructed space. 

The unit comes with a digital display and control panel to provide convenience, ease in monitoring, and regulate temperature and humidity inside the wine cellar. The equipment should not be visible in the wine room, so we decided to place it two floors down in the basement area.  

The basement area of the hotel was a good choice because it has an open space, allowing heat from the cooling unit to dissipate properly.
